自制榛子巧克力酱 (两个食谱) Homemade Hazelnut Chocolate Spread ( 2 recipes)

喜欢吃Nutella,为什么不自己自制榛子巧克力酱呢? 做法超级简单,而且自己做的,新鲜,没有防腐剂也吃得安心。甜度,食材比例(喜欢比较多榛子还是巧克力),你都可以自己掌控。以下我分享了两种食谱:食谱1的口感会比较浓郁但一定要用黑巧克力,不然会太甜。食谱2是根据小森林日本电影里的食谱,这做法的好处是可以自调甜度。我个人比较喜欢食谱2。

食谱1:
榛子 1 杯
黑巧克力块 1/4杯
盐 1/4小匙
橄榄油 (可选)

做法:
1. 榛子放进烤炉烘烤180C, 5分钟至黄金色。然后取出,倒在一条干净的抹布上,抹布盖上榛子,搓一搓,将外壳搓开。(如果没有烤炉,可以炒至香就可)
2. 倒入搅拌机,搅拌至滑顺。
3. 黑巧克力块,可以用微波炉,放进微波炉热20秒,取出搅拌,再放入热20秒。重复至全部溶化。小心放太久会焦。或是用隔水溶化巧克力块也可以。
4. 溶化的巧克力倒入搅拌机, 加盐,与榛子一起搅拌至滑顺。如果太干,可以加一点橄榄油。
5. 倒入罐子。放进冰箱可以用上几个星期。

食谱2(小森林):
榛子 1 杯
牛奶粉 1大匙
可可粉 1–2大匙
糖 3-4大匙
橄榄油 1大匙 (太干,可以多加)

做法:
1.同样把榛子放进烤炉烘烤180C, 5分钟 至黄金色 。然后取出,倒在一条干净的抹布上,抹布盖上榛子,搓一搓,将外壳搓开。 (如果没有烤炉,可以炒至香就可)
2. 倒入搅拌机,搅拌至滑顺。
3. 搅拌好的榛子倒入锅里,加入可可粉,糖,牛奶粉和食油,一边搅拌小火煮。
4. 煮至全部食材溶化和滑顺,就可以倒入罐子。
5. 放进冰箱可以用上几个星期。

做好的榛子巧克力酱,如果可以抹在自己做的面包上,就真的很好吃。

Following are 2 types of recipe: I think recipe 1 have thicker texture but must use dark chocolate, or else will be too sweet. Recipe 2 is based on the Japanese movie “little forest” , it is good that we can adjust the sweetness by our-self. I personally prefer second recipe.

Recipe 1:
Raw Hazelnuts 1 cup
Dark chocolate 1/4cup
vanilla essence 1/2 tsp
salt 1/4 tsp
olive oil (optional)

Method:
1. Roast hazelnut in oven 180c for 5 min until golden brown(or stir fry). Tranfers the roasted the hazelnuts onto a dry kitchen towel, cover the hazelnuts and rub vigorously until the skin off.
2. Process the hazelnuts in a food processor until it turn nut butter.
3. Melt the dark chocolate in microwave oven or double boiling. microwave need to take out every 20seconds, and stir it, be careful it might burn if over heated.
4. Pour the melted chocolate into the nut butter, add salt and slightly process until it is smooth. (if too dry, can add some olive oil)
5. Keep in jar and refrigerated up to few weeks.

Recipe 2:(recipe from the movie little forest)
Raw Hazelnuts 1 cup
milk powder 1 tbsp
cocoa powder 1-2 tbsp
sugar 3-4 tbsp
Olive oil 1 tbsp (can add some more if too dry)

Method:
1. Roast hazelnut in oven 180c for 5 min until golden brown(or stir fry). Tranfers the roasted the hazelnuts onto a dry kitchen towel, cover the hazelnuts and rub vigorously until the skin off.
2. Process the hazelnuts in a food processor until it turn nut butter.
3. Pour the nut butter into a pan, add milk powder, cocoa powder, sugar and oil. Keep stirring and cook with small flame until everything melted and texture is smooth.
4. Keep in jar and refrigerated up to few weeks.
